Raw oysters—particularly those from the Gulf Coast—are the main source of the Vibrio bacteria, which can cause three or four days of cramping, diarrhea, vomiting and fever starting one to four days after consumption. The bacteria can be fatal to people suffering from liver disease. You cannot tell whether an oyster is contaminated by its look, smell or taste.
